Every bag carries a roast date

We buy small lots and roast them in batches we can actually sell fresh. The bag tells you where it grew, who grew it, how it was processed and when it came out of the drum.

If a coffee sits too long, it comes off the site. That is the whole policy.

Three things that change the cup more than anything else

Grind it yourself

Ground coffee goes flat in days. A hand grinder is the cheapest upgrade that makes every other thing you own work better.

Control the pour

A gooseneck spout turns pouring into a decision instead of an accident. Even water, even extraction, no bitter edges.

Weigh everything

Coffee in, water out, time on the clock. Three numbers and the same cup every morning instead of a coin toss.

    Rinse and dose

    Rinse the paper with hot water and throw the rinse away. 15g of coffee, ground like table salt.

    Bloom

    Pour 50g of water at 94°C, just enough to wet everything. Let it swell and off-gas.

    Two pours

    Take it to 150g in slow circles, wait for the bed to drop, then finish at 250g.

    Drawdown

    It should run dry between 2:30 and 3:00. Faster, grind finer. Slower, grind coarser.

The usual questions

When is my coffee roasted?

Mondays and Thursdays. Orders placed before Sunday or Wednesday midnight go out on the next roast, and we ship within 48 hours of it.

Should I buy whole bean or ground?

Whole bean if you own a grinder. If you do not, pick the grind that matches your brewer at checkout and we will do it on the day we pack it.

How long does delivery take?

Two to three working days in Cairo and Giza, three to five everywhere else in Egypt. Free over 1,500 EGP.

Can I pay cash?

Yes. Cash on delivery is the default at checkout, and card payments go through PayMob if you prefer.
